Extreme Grocery Budget Challenge Week 11

Happy Monday morning! It is a chilly morning here in Florida, and I did not know it was going to be this chilly. We slept with the windows open, and the fan in the window. Brr!!! But, I slept like a baby. It was just hard to get out of a nice warm bed this morning.

I hope you have been following along with the Grocery Budget Challenge. I actually have to increase our budget from 63 dollars per week to 75 dollars per week, as everything has gone up at least a little bit, and some a lot. I can not even get our basics anymore for 63 dollars per week. That is for 3 people in my home, currently. It is still a huge saving from what we were spending before I started this challenge. Now, with that said, I obviously could cut some things out, like coffee creamer, snacks, etc. But, that is simply not realistic for us, and since this is a saving money budget, not a necessity, it is totally not going to happen. When you look at the picture below, from Walmart, the big box under the veggies is actually one of the fresh pizzas they offer. These used to be 5 dollars, yesterday it was 6. Then you will see a Quest pizza, which I didn’t even know Quest offered pizzas. Anyway, that was over 7 dollars for a small one-person pizza, but I went grocery shopping after I got out of work yesterday, and we needed something quick for dinner. I did not want to eat the other pizza, so I figured I would try one of these as it was better for me. I will post my thoughts about that pizza tomorrow, on Taste Test Tuesday, and explain why it was a better option for me. But, I totally could have saved 14 dollars on just those two items, and either just went home or added some other fresh or frozen items to my cart. The Romaine lettuce seems to be mostly cut from the image, but it is there. I try to eat a salad every day for lunch. It doesn’t always happen, but I try. I also have another healthier product I tried last week that I loved. I will share that in the coming week. That grass-fed organic ground beef was actually the same price as the non-organic variety, for the same weight. In general, if I can not fit the organic beef into my budget, I just won’t eat it. My family will, but I won’t.

This challenge started out as a pantry/budget challenge. My CKD journey has brought me back to stage 2 and I personally believe a lot of that is due to dietary changes I have made. But, I wanted to see if I could tolerate more shelf-stable, pantry, convenient type foods and still feel well. It did not take long to figure out that no I could not. So, I moved back to a more fresh food way of eating, frozen, and canned are OK, for veggies and I felt better. Organic is also best for me, but it is hard to stick to a low food budget buying all organic. Once inflation starts to recede, if it does, I will go back to the 63 dollars per week.

I can say that this budget has already taught us so much about our spending and eating habits. Plus, the fact that we waste a ton of food just because it doesn’t get eaten. I doubt we have a fear of running out of food because we were buying way more than we needed and we are still eating off that.

This week started 3 days late, so last week was 10 days in length, which is awesome. Next week we have family coming to visit from out of state that we have not seen since before Covid. So, I will not be doing a budget challenge next week as I am sure that will not work at all for 5 to 7 people.

I also do not shop at several stores. I pick one or two stores for that week and that is where I go. This budget is for food items only. It does not include household items or pet food. But, on that topic, it is time to buy pool supplies to open the pool. We have had a pool ever since we moved to Florida 22 years ago. I can not believe how high the prices of pool supplies are this season. I about died yesterday. I don’t even know if it will be worth it to run the pool once we get into late July and August when maintaining the pool is already that much harder due to the heat and humidity. It might be the first year ever I refuse to afford to keep the pool open. Since I am really the only one that uses it consistently anymore, it might be more of a cost hog, than a convenience.

National Sloppy Joe Day!

Welcome back for another Food on Friday topic. I love Sloppy Joes! Do you? Today in the USA, is National Sloppy Joe Day. Watch the short video below to learn about the history of sloppy joes and her recipe. I make mine a little different than she does. I really enjoy her food history videos. Be sure and check out some of her others. I was actually going to make these today, but I completely forgot to take out the meat to thaw. But, I have made these lots of times using the ingredients below. My new week for the grocery budget challenge will begin Sunday, as that is when I have time to grocery shop.

Now, I have CKD, and I try to avoid HFCS at all costs. It upsets my stomach and generally makes me not feel good. There is a standard Sloppy Joe sauce that is available in stores. It is affordable, but it does contain HFCS and lots of sodium. So, I choose not to use it, and honestly, I don’t even think it tastes that good. Keep your portion size of the meat mixture to no more than 3-4 ounces, and try to make a vegetarian option using mushrooms. Ooh, I bet that is delicious.

To lighten up your Sloppy Joe you could use ground turkey, lean ground beef, or even ground chicken. A whole-grain bun would add more nutrients than just a plain white bun. If you are trying to keep it light don’t add cheese to the finished sandwich.

These are the ingredients I use.

  1. Lean ground beef, the leanest I can find, or ground turkey.
  2. About a tbsp of olive oil to cook the ground beef and veggies in
  3. A bell pepper, green is the most affordable
  4. Some chopped onion. I like Vidalia onions.
  5. Garlic minced, or any garlic you have on hand. I generally have garlic powder.
  6. Low sodium tomato paste.
  7. 2/3 of a cup of catsup. I like organic and prefer sugar free, though no one else does.
  8. 1.3 cup of whatever vinegar you have on hand. I usually have red wine vinegar, or rice vinegar on hand.
  9. 1 tbsp yellow mustard
  10. 1 tbsp of brown sugar, use stevia brown sugar if you watch your sugar intake
  11. 1/2 tbsp of Worcestershire sauce.

That is it. After you cook the ground beef, onions, and peppers, add everything else, stir it all in, and voila a Sloppy Joe is born. Don’t forget to drain the fat off of your meat.

The Biggest Kidney Development In 20 Years!

Hello! It is still National Kidney Month, and I meant to talk about this topic weeks ago, but I got busy with other things and it didn’t happen.

I am not going to go into all the mumbo jumbo of a clinical trial, there is a video for that, lol. The video below will talk about the clinical trials for Farxiga and the results. I will keep it simple and state it met all of their standards with flying colors! The FDA has now approved Farxiga for the treatment and prevention of kidney decline in CKD patients with or without Diabetes. This is huge!

Now, before you get too excited there are some caveats. It is for stages CKD 2-4, and you can not be on hemodialysis. You can read the drug information here, but if you are on a low sodium diet, and which person with CKD is not on a low sodium diet, then you need to proceed with caution as Farxiga can cause you to be dehydrated, and cause volume loss. Make sure you discuss all aspects of this drug if you decide to ask your doctor about using it. The people in the clinical trials were on ACE Inhibitors, or ARBS, most likely to control blood pressure. So, I would be curious to know how Farxiga would work for those of us who do not take those medications. Not all of us do, though it is a typical standard of care for most people with CKD. Also, and most important in my mind, is that Farxiga can cause a type of genital infection, that can lead to gangrene, in the genitals. Yes, you read that correctly. You would need to pay extra attention to this very sensitive part of your body for any signs of infection. You also can not have Polycystic Kidney Disease or autoimmune kidney disease to take Farxiga. There are other drugs in this class of medication, but only Farxiga has been FDA approved for the treatment of CKD. Farxiga is made by Astrazeneca.

Now, my thoughts on Farxiga. Would I take it to slow the progression of my CKD? Absolutely, if what I was currently doing did not already have me back hovering at stage 2. I also do not take Ace inhibitors or ARBS, so I probably would be disqualified from using it. I do not want to be on hemodialysis, ever, and so this would be something I would consider. I would request my doctor make adjustments in my plan of care, such as sodium restrictions, and I would request closer monitoring for side effects.

Kidney Class: Week 11

Welcome back to another week in the American Kidney Fund, Kidney Education Class. This is week 11, and I will be sharing slide 11, with comments from my personal experience with CKD, and my experience as a nurse.

In week 10 I discussed how the number one cause of Kidney Failure is Diabetes. This week I will discuss the #2 cause which is Hypertension, sometimes referred to as HTN, or High Blood Pressure. They all mean the same thing.

There is a short video below that explains how HTN damages the kidneys and can lead to Kidney Failure. There is no sound on this particular video. My thoughts and comments are under the slide that is the property of the AKF and provided to me as a Kidney Coach.

As you can see in the slide HTN causes 25% of kidney failure cases. This is a large amount. Keeping your blood pressure in good control through healthy lifestyle changes, exercise, diet, and medications when needed are all vitally important. As someone with CKD, and as a nurse, I understand the importance of keeping my blood pressure under control, and so far I have been successful. However, CKD in and of itself can lead to high blood pressure. So, keeping your CKD well managed is also very important.

Ouch Grocery Prices!

Hello, everyone! If you read here often then you know that I missed my Wednesday post for the next kidney class. I worked all day, and it was a rough day, and I was exhausted. I just plain forgot. I do have to work again next Wednesday, but it is mostly meeting stuff, and I will be bored and thinking about other things I need to do, lol.

The other day I blogged about the really high gas prices. It cost me 40 dollars to almost fill my tank this morning. That is about 8 dollars more than typical. 8 dollars may not sound like a lot, but even if it was 8 dollars a week, that is 32 dollars a month, plus another probably 35 for my husband’s car, extra each month. It will add up pretty fast.

Today is the start of week 10 of my 63 dollars per week grocery challenge budget. That equals 21 dollars per person per week. We pretty much have been able to stick with it, mostly because I shop smart, make a list, shop my pantry first, and have an idea for meals from what we already have on hand. Our on-hand foods are dwindling, and soon this will just be a budget of 63 dollars per week. The budget is for food items only, and not for pets, or other home supplies. You can see the picture of the items I bought this week. I checked all of my local stores for the best deals, and Walmart had the best deals. I mean I could get one or two things elsewhere but to me, it isn’t worth it to go to several stores, and it was pouring rain today too. Anyway, I stuck to the list and it was 5 dollars over. Since these are typical of what I will buy each week, this is probably going to happen each week. So, I will have to put something back each week to stay within budget. Since we are a family, all with different eating needs, and styles, it is hard to follow a strict budget. I have CKD and am on a weight loss journey. My husband eats what he wants, and I have a teen, so yeah teens, lol.

Walmart had the best price on boneless skinless chicken breasts, at 1,99 a pound. Yes, I know I can get another variety of chicken for less, but again, I have to buy what everyone will eat. I could do boneless skinless chicken thighs, but apparently, they didn’t have any. You will also notice I did not buy much fresh stuff. I needed onions, I use them in everything, and that bag of onions was 4.98 and the more affordable yellow onions were sold out. I bought frozen veggies instead, which I prefer over canned. No organic purchases either, this week. Everything is at least a little bit more expensive. I did buy more brown rice because for the price and the nutrition profile it works for me. I can add some beans and we will have a complete protein. I also have the bag of lentils from last week that can be added to rice. In my pantry is also quinoa.

What will be on the menu this week? Tonight, we are finally going to eat the ham steak, some pineapple rice, and a veggie. If I decide I don’t want the ham, I will stir fry up some onions, and mushrooms to put over my rice. Nobody else will eat that but me, lol. Tomorrow we are eating out because of our anniversary. Sunday, my son will be visiting and we will have kielbasa, mac n cheese, baked beans, and green beans. I have some apple chicken sausages in my freezer, that I will eat instead of kielbasa, though I love kielbasa. I may or may not have the mac n cheese. I still have one package of ravioli left and that is why I bought the sauce. I can have my whole grain pasta with sauce. I don’t really like ravioli anyway, but my husband and daughter do, and price-wise it is a good deal. Beyond that, I have not really planned much out. My biggest struggle right now is breakfast, and lunch, on the days I work. I did some prep and got some potatoes done in the air fryer. I can just heat these up and have an egg or two over them in the morning. When you walk 15,000 steps a day at work, I need breakfast to start my day. If I had a desk job it would be different. Lunch is harder. I don’t want to prep a meal for the next day when I get home from work, and I don’t want to take leftovers that will need to be warmed. That is why I bought the whole wheat bread. I really like the Ole Wellness low-carb wraps, as does my husband. But, you only get 8 wraps, and the price of them has gone through the roof. The whole wheat bread was only 1.48 and I didn’t check, but I hope it doesn’t have high fructose corn syrup. My husband will not use whole wheat bread, so I had to get regular sandwich bread for him. I still have not had time to try making my own bread, but after next week, my weeks should quiet down a little. I can pack a sandwich and a piece of fruit for lunches. I still have apples and oranges on hand.

I am still contemplating shopping every two weeks, at 126 dollars, instead of weekly. I have not decided if that will be more cost-effective. If gas continues to rise, most likely it will be.

Ouch, Gas Prices!

This is a different kind of Healthy Tip on Tuesday post, but it is just as important for your overall health as any other tip, because it can cause financial stress and other stress-related issues that can affect your health and wellbeing.

If you live in the USA, then you know that the government just announced bans on Russian energy imports. Before that announcement was made, here where I live gas prices were already $4.20/gallon. Now, I am not going to go into the politics of climate consequences of oil and gas. But, you could certainly vote in favor of those topics this fall.

You are most likely going to have to conserve gas, especially if you drive a large vehicle. I think my gas tank is like 10 gallons, which means to fill my tank it would be 42 dollars. That is a huge jump from just six months ago. Since we live in a very rural area, and we have to drive at least 30 minutes to get to anything we want, you can see how expensive this could really get.

How can you conserve gas? Some of these will be related to more rural folks, than people who live in the city.

  1. Don’t drive. This is the most obvious way to conserve gas, though it is not that practical especially if you live in rural areas, but work in the city. If you can walk, or bike to work, that is an option. Car pooling when you can is another great option. We have two cars and while we both work in the same city, our schedules are no where near the same. So, that won’t work.
  2. Drive less. This will be my most obvious choice. I will try to shop in town, though their prices are high and I am not always happy with the quality of food options. I surely do not want to be buying food from Family Dollar and Dollar General. With CKD that would be a disaster for me. I will not be picking up extra shifts either, as the only thing that extra money will go for is gas. I will pray my husband does not have to return to the office for a little longer, too. Which is a good point in itself, work from home if you can.
  3. Combine your trips. I already do this, but I may have to be even more thoughtful of this. My doctor is 30 minutes away, both of them, and they may have to be more willing to do telemedicine since they don’t want to do it anymore with the pandemic winding down. I think this is totally dumb by the way, unless I need an actual physical exam.
  4. We may have to consider moving to the city sooner than we wanted to, if it persists for a very long time. The city has public transportation that we absolutely do not have access to in rural areas.
  5. Buy a smaller vehicle, EV, or only have one vehicle. First off I would love an EV, except I refuse to pay the price for one. The most affordable, the Nissan Leaf is almost 30,000 dollars. Sorry, I have never paid that for a car, nor will I. I already drive a smaller Kia, and my husband’s is not too much bigger. We used to own only one vehicle, back when it was feasible. That option really is no longer feasible, unless I was willing to leave my job and get a more local job, which I really do not want to do, but, again if it persists for a super long time, getting a job closer to home is a good option.
  6. Drive slower. Now I heard a politician suggest that on the news this morning, that going 6 to 7 mph slower would save gas. Now that is only really true if you drive at like 57 mph. Because, gas efficiency peaks at like 50mph. I looked that up. I know I am super smart, but I did not know that, lol. So, drive much slower than you are probably used to and save gas.
  7. Don’t be an aggressive driver. This just simply wastes gas on a whole.
  8. Ease into stops slower. This is something I already do, but my husband does these abrubt stops that I hate. Don’t be abrupt, it is rude, and wastes gas.
  9. Maintain your car with routine maintenance.
  10. Make sure your tires have the proper amount of pressure and rotate them.
  11. I know this one is hard, but keep windows, sun roofs, convertible tops, and moon roofs closed when you are driving at high speeds like on the freeway.
  12. Don’t let your car idle. I know I am sorry to all my northern friends who warm their cars each morning. Or, even here where we like to cool it off in the heat of the afternoon. If you are stuck in traffic for more than a minute or two, turn your car off, and then turn it back on when you are ready to move.
  13. For all of my camping friends, or people who carry lots of tools, lightening up the load saves a ton of gas. Pulling, towing, or packing up your vehicle with heavy items uses a lot more gas than if you lighten the load.

I am so much happier now that I left my job doing 12-hour shifts every weekend, to 8-hour shifts, 2 days a week. I can come home and cook dinner for my family, exercise, do a blog post, etc. Not just come home and go to bed because I am exhausted to just do it again the next day. This matters to me, money does not. If I had to work more, I don’t know that I would. I would much rather learn to live within my means as we spend money on stuff that is really not necessary. When I was diagnosed with CKD I decided life is too short to work my life away, and I meant it. I know people will scoff at that. I am blessed to have a wonderful husband who supported me in staying home to raise my kids because that matters to me. Some will scoff at that and say you are lucky. I wouldn’t call it luck, marriage is hard work and there is no luck involved. We both have had to work hard to make each other happy, and that matters. Reading, learning, training my dog, being with family and friends, gardening, relaxing in my pool, bird watching, photography, these things all matter to me, and I make space in my life for them. I do not enjoy entertaining, and I generally don’t even like company. But, I will meet my friends elsewhere to have friend time. I have always been that way and I don’t see it changing anytime soon.

Since my second child will be graduating this Summer, and I will be finishing up my classes, I may decide to work more hours, or I may not. I may get a work-from-home job. I have not decided yet, but I do know I am paying for these classes so I expect I will use them.

Start Of Week 9 Of The $63 Per Week Grocery Budget Challenge

Hello, and welcome to Friday. Have you joined the challenge, yet? Each week I spend 21 dollars per person, per week, on groceries. There are 3 in my home at this time, so that is 63 dollars per week. At first, it was a pantry challenge as well to see if I with CKD could still feel healthy eating pantry or shelf-stable type meals. That only took a few weeks to decide absolutely not. However, as the weeks have gone on I have found that we can still eat quite healthy on the small budget I created. We still have a few snacks for the week, and we still eat meat. It is a little trickier I will admit, but so far it is very easily doable. If you take out all of the junk we tend to eat, then you can afford the good stuff. I can’t afford organic, or grass-fed most weeks, but I can squeeze it in if it is on sale. If I could tolerate beans better, and my family would eat beans as an alternative to meat, that would be much better, but alas I am not the only person that eats in the house.

As you will see in the picture this week I focused on meat. I went to Save A Lot because they had the best prices on the meat. My husband likes those Ole low-carb wraps, I do too, actually, I just don’t eat them as much. They are quite expensive for only 8 wraps. I am going to see if I can find a recipe to make my own homemade low-carb wraps. They don’t even have to be low-carb as long as they are high fiber. There are some snacks in there too, for my daughter and husband. I tend to try to avoid snacking altogether. We still have apples and oranges on hand. My daughter likes those instant potatoes for her lunches. Drinks are one place that can suck up a lot of money. We have cut way back on the drinks, and just have water most of the time. Except for coffee and creamer, if you have been following along then you know coffee is no longer part of this budget. I tend to buy the larger packets of meat and then split them up into proper portion sizes before freezing them. Use your leftovers too! Don’t let your family waste them. I spent $2.50 at the Dollar Tree and picked up the lentils, and a 2 pound bag of rice. The lentils do not bother my stomach as much as beans, but my family won’t eat them. So, I will prep them and store them for me when I don’t want meat. I spent the full 63 dollars this week, and not a penny less.

This week my husband was away for dinners, again, but he will be back next week. So, my daughter and I had smaller meals and leftovers. I did some meal prep this week by air-frying almost a whole bag of potatoes. Now they are ready for any meal I want to use them in. Potatoes take forever to cook, but they are affordable and healthy. I have started a new plan as part of my weight loss journey to eat little or no carbs after lunch. I can not say I have adjusted to this yet, and it is still a work in process.

For dinners coming up we will be having: tonight baked pork chops and a veggie, Saturday ravioli with sauce, Sunday breakfast for dinner, Monday cornbread and ham. Now, they may not be in that order, and I haven’t thought past Monday. Since I am doing low carb for dinner I will either prepare the dinner meal for lunch, as my husband still works from home, or I will make it for dinner and save it for my lunch the next day and eat something else for dinner. So far it really only affects the ravioli dinner, and I don’t really care for them anyway.

I bought the ham steak on purpose because I knew I had two cornbread mixes in the cupboard that need to be used. Now, they do have HFCS which I generally avoid, but I bought the dumb things and I refuse to waste them, but I won’t buy them again. Gas is getting so high now, that we probably won’t be heading to Aldis again anytime soon unless I go after work, but even then it is still not that close to my new job and I really don’t want to shop after working all day. So, I will have to do with the stores that are closer to me.

Kidney Class Week #10- How To Prevent Diabetic Kidney Disease

Hello, and welcome back to week 10 of the AKF Kidney Classes. I can’t believe we are on week 10 already. Please, if you have not read the other posts, from the beginning, please go back and read them. You will find them in the archives under the CKD category. My name is Melissa and I am a Health Coach and a volunteer AKF Kidney Coach. Since covid, I have not attempted to do these in person, and it was approved for me to share the slides and information here on my blog, just like I would if it was in person. By doing a slide each week it gives more time for people to read and ask questions. These posts will always be here, for years even. Please leave me comments, or ask me questions and I will answer, except spam I will not answer spam. I also have CKD and my kidney journey has brought me back to hovering right at stage 2. I am passionate about helping people to learn how to keep their kidneys healthy both before and after they have CKD. I love it when I find an AKF video on the topic I will be discussing. Their webinars are kind of boring, I will admit, but they are chock full of good information. If you have kidney disease, cares for someone with kidney disease, or want to prevent kidney disease these classes are for you. Each week I share another slide in the class series, there are 39 I think altogether, I give my perspective as someone who has CKD, and then I share my medical experience as a nurse. Diabetes is the leading cause of kidney disease by 40%. Learning to either prevent Diabetes or keep your blood sugar under good control once you have Diabetes is vital to keeping your kidneys healthy. Please read the slide below, and then watch the webinar. I do not have Diabetes, but it runs in my family, so I am always alert to trying to keep it at bay. I am tested at least twice a year to be sure my blood sugar levels are normal. I take care of lots of patients with Diabetes and while it is a very hard disease to live with it is very manageable. When you have blood sugar spikes and your body does not produce enough insulin, or you are insulin resistant, the tiny nephrons in your kidneys become clogged and damaged and the nephron can die. This leads to the kidneys not being able to filter the waste out of your blood and a backup of waste occurs because these tiny nephrons are filters. As the waste backs up and can not be removed from your body you will have all kinds of unpleasant symptoms and complications.

Simple Self Care Saturday #1

Welcome to Saturday! The weather is beautiful here in Florida today, and I hope wherever you are it is too. Now that I am no longer working every Saturday, nor doing 12-hour shifts, I am starting a new self-care series of posts. I totally believe in self-care that is simple, easy to do, affordable, easy to understand, and uncomplicated. Self-care is something you intentionally do for yourself. Keeping it simple will aid you with making self-care a habit. What is one type of self-care that I have made into a habit? Getting up and taking at least 250 steps every hour, while awake. Now that it is a habit I feel sad if I can’t do it. For example, this week I started my new job and it was all done on a computer, in an office. I could not get up and move every hour, or I guess I didn’t think to ask to do it, and I felt so lazy by the end of the day. Not all types of self-care will meet everyone’s definition of my time. For example, having my nails and hair done is not for me, but some people find it very relaxing and self-loving.

For this first simple self-care Saturday I would like to talk about Tai Chi. I am not a certified Tai Chi instructor, and I only dabble in it as a form of energy balance. I actually love Tai Chi and I like to incorporate it with my Reiki. I am trained in Reiki. Both are types of energy healing but Tai Chi is also more of a type of exercise or intentional movement. It can improve your balance, muscle strength, all while focusing on your breathing. The movements are very slow, so you focus on the movement and the breathing. The video below is 11 minutes long, but the Tai Chi session is only 5 minutes in length and it is perfect for a Simple Saturday, or any day of the week. I try to do this routine daily, but it is not yet a habit, so I often do it a few times a week. I find it is a great cool-down routine after exercise, or after a stressful day at work to relax. Once you learn her easy routine you won’t need the video, though you may want to play some soft music, or nature sounds once you have it memorized. Try it if you are in pain, anxious, worried, etc. Once you master this first video you may wish to try some more of her Tai Chi routines, or just stick with this simple one.
